Old Flavors Smoking Education
- Authentic experience in Elk's Dream
- Duration: 2.5–3 hours.
1. Meat preparation – by hand and with ancient secrets
Participants receive a good quality piece of pork and, together with us, they:
- learn to dry rub meat with salt, pepper and herbs,
- learn how this method was used in ancient times,
- hear why the spices we use (laurel, coriander, celery, parsley, dill, mint and marjoram) create the distinctive taste of the Sudervė region.
This is not a demonstration — each participant works with their own hands.
2. Demonstration of the smoking process
We light a traditional wooden smokehouse.
Participants see the entire process live:
- how the smoke flow is managed,
- how to choose wood (alder, apple tree),
- how smoke changes the smell and texture of meat.
3. Tasting – two flavors, two stages
Since the actual preparation and smoking of meat takes about 2 weeks, during the education:
We grill the meat we prepared together,
- participants taste a freshly made, warm product,
- feels the natural aroma of spices.
We taste the pre-smoked product:
- it’s an authentic, fully mature smoked flavor,
- participants understand the difference between “today’s preparation” and “mature”.
We always serve our own herbal tea with the tasting.
4. Stories, laughter and fellowship in the tipis
All education takes place in the Elk’s Dream tipis and outdoor space — a cozy place where smoke and nature blend with conversations and light humor.
This is a unique experience for families, friends, guests from abroad, and groups.

This education is for those who want a quick but interesting look at traditional meat smoking without the full long process.
What will participants learn?
- How meat was salted in the past and what spices were used in our region.
- How hot smoking works and why smoke is like an “invisible spice.”
- What a wooden smokehouse looks like and what kind of wood our ancestors used.

- Our herbal teas, grown and dried in Elk’s Dream.
